About the Recipe

Morita chiles are full of flavor, the smokiness they have is intense and gives salsas a deep, delicious touch.

Ingredients

5 roma tomatoes

1 clove of garlic

1/4 onion (diced)

1 morita chile

1/3 cup cilantro (chopped)

1 teaspoon salt

1/2 cup of hot water


Preparation

  1. Remove the stem of the chile and cut in half, put it in the hot water for 10 minutes.

  2. Cut the tomatoes in quarters and dice the onions.

  3. Use a hot pan, high heat and put the tomatoes, onion, and garlic, no oil. let them char and loose water until the tomatoes are soft and chared.

  4. Use a mortar and pestil or a Molcajete, first look for the garlic from the pan, and grind with the chile and the salt, add the rest of the ingredients, and mash, until you have a chunky consistency.

  5. Add the chopped cilantro and serve with totopos.
