About the Recipe
Nicuatole is a treat from Oaxaca and has a prehispanic origin.
Ingredients
3 cups whole milk
2 teaspoons vanilla extract
1 cinamon stick
1/2 cup sugar
1/2 cup corn flour
1/2 cup water
For the guava sauce:
5 guavas
1/2 cup of water
3 tbspoons sugar
Garnish:
You can use sprinkles, choped almonds, fresh guava slices, etc...
Preparation
Simmer the milk, low heat, add vanilla, sugar and cinammon for 8 minutes.
Blend the water with the corn flour if it gets too thick, add some of the warm milk.
Use a whisker to incorporate the flour mix to the milk, keep simmering until it gets thick, you are looking for a thick batter consistency.
Pour in molds or small containers and cover with plastic film. put it in the fridge for at least 2 hours.
Blend the guavas, sugar and water, strain to get rid of the seeds.
Serve and garnish with the guava sauce, sprinkles or whatever you prefer.
